Wanderfire: Thanks for sharing this blog with your family! To answer your question, you can use any type of lemon you like. For this recipe I used Meyer lemons and from what I've read they are the preferred lemon for preserving because of their softer skin (peel) and sweet taste. Meyer's are also my personal favorite and hard to find when not in season so I took advantage of them now and thanks to the preserving process get to enjoy them all summer. yay. Do you have any recipes to share that use preserved lemons? Mine are nearly ready and I think I’ll start with a lemon infused broth for steamer clams and I would love more ideas.

This recipe is so terrific that I forwarded this page to everyone in my family. Unfortunately I don't live in a convenient location where I can easily go out and purchase fresh lemons so I just buy them through http://www.buy-lemons-online.com/ One question I have is this: Which kind of lemon do you recommending using? Eureka lemons? Lisbon lemons? Have you ever tried Sweet Meyer lemons?
Thanks
